Ingredients


110 grams of butter

1/2 cup of sugar

2 1/4 cups of plain flour

2 eggs

1/2 teaspoon of vanilla essence

1 teaspoon of baking powder

Pinch of salt


For the filling


Cinnamon

Plum jam

Assorted dried fruit: a mix perhaps of currents, sultanas, raisins and candied peel


Beaten egg for glazing and castor sugar and chopped nuts (optional) to sprinkle on top.


Method


Rub the softened butter into the sifted dry ingredients. Add well beaten eggs with vanilla and mix to form a soft dough. (This basic dough can be used as the foundation for a variety of biscuits.)


Roll the dough into long narrow strips about 75mm wide on a flour dusted board. Brush the strip with melted butter and sprinkle over a little cinnamon. Spread some jam thinly over the dough and then a layer the assorted dried fruit along the strip. Fold the edges of the strip over each other and press the dough together at the top to make a long, tightly rolled log, 30mm to 50mm in diameter. Roll the log over so the join is at the bottom. Cut the log into 50mm to 75mm long cookies.


Place the cookies on a baking paper lined tray. Brush the top of each cookie with beaten egg and sprinkle on some caster sugar and chopped nuts.


Bake in a 230C oven for 8 to 10 minutes until golden brown.
