Cinnamon Pinwheels

Ingredients
2 cups flour
170g softened butter
2 teaspoons baking powder
1 tablespoon castor sugar
1 egg (2 if they are small)
Pinch of salt
Ground cinnamon
Method
Sift dry ingredients together
Crumble in butter until it is mealy
Beat egg and add
It’s also important to chill the dough for at least 1 hour and again the cut out cookies before baking while the oven is pre-heating. Ding this will help produce the perfect cookies.
Roll out dough thinly on floured board and brush with melted butter
Add a thin layer of apricot or strawberry jam
Sprinkle with cinnamon and extra castor sugar.
Roll into a log about 50mm in diameter
Using a sharp knife, cut into slices about 10mm thick
Lay cut side down on a baking paper lined baking tray
Sprinkle with more cinnamon and sugar
Bake in a 180C oven for about 12 minutes until lightly brown
