Sponge Cake

Ingredients


1 cup self-raising flour

1 cup castor sugar

2 eggs

½ cup boiling water


Method


Preheat oven to 190C

Grease and flour a pair of 180mm (7 inch) sponge tins.

Beat the eggs and sugar together until the mixture is very creamy, white and fluffy.

Mix in the flour quickly and then the boiling water.

Pour the mixture into the tins and place in the oven immediately. Bake for 20 minutes.

Cool on a wire tray and then sandwich together with jam and top with sprinkled icing sugar.
