Filo Spinach Pie

Ingredients
500g Filo
250g butter
Filling
2kg fresh spinach
1 bunch spring onion
One bunch each of parsley and dill chopped
3 eggs
500g feta
Sunflower seed oil
Method
Wash spinach well, blanche in boiling water and chop.
Lightly fry spring onion in some sunflower seed oil, add spinach, parsley, dill, salt and pepper. Cook for about 15 minutes on low heat.
Add grated feta and beaten eggs
Brush each layer of filo with melted butter
Place half the sheets in a large baking pan.
Put filling and balance of filo on top.
Cut into strips 50mm x 50mm through the three layers.
Bake at 175C for 45 minutes
Serve hot or cold
