Almond Tart

Base
Ingredients
110g softened butter
2 tablespoons sunflower oil
2 tablespoons castor sugar
1 egg
1/2 teaspoon vanilla essence
2 cups plain flour
2 teaspoons baking powder
Pinch of salt
Method
Cream butter, sugar, oil and vanilla
Mix in sieved flour and baking powder
Remove from bowl and knead gently
Line a tart dish and blind bake at 180C for 10 minutes
Filling
Ingredients
110g softened butter
2 eggs
1/2 cup ground almond
2/3 cup castor sugar
1/2 cup crushed Marie biscuits
1/2 teaspoon almond essence
Method
Beat butter sugar and egg and essence
Add dry ingredients
Pour into base
Cook in 180C oven for about 30 minutes
Plain ice whilst still hot
